Easier Than Pie

Breakfast “Cookie”
This recipe is incredibly versatile. It is completely experiment-able, which is arguably the best part of cooking (if you count microwaving as cooking). The “cookie” is more cake-like in texture with the flavor similar to an oatmeal cookie.
Ingredients:
- ½ medium banana
- 1 ½ tablespoons peanut butter
- ½ tablespoon honey (or agave)
- 1 tablespoon milk
- 4 tablespoons rolled/quick oats
- 1 tablespoon nuts or raisins
Instructions:
- In a large, microwavable mug, mash the banana with a fork.
- Add the peanut butter, milk, and honey. Stir until mixed well.
- Add the oats and nuts/raisins and stir until combined.
- Microwave for 45 seconds to 1 minute, or until the top of the cookie is firm to the touch. (Cooking time based on a 1200-watt microwave. Timing will vary.)
- Enjoy warm!
Note: This recipe can be made vegan by substituting dairy for plant milk and omitting the honey. (If your plant milk is sweetened, you can get away without adding a sweetener, but if you are a vegan who enjoys the extra sweetness, agave syrup is an appropriate alternative.)
Additive Free Mac ‘n’ Cheese
Boxed/pre-packaged mac ‘n’ cheese may be convenient, but this version has a much cleaner ingredient list and could not be easier to make. Best of all, you control the cheesiness!
Ingredients:
- ½ cup macaroni
- ⅔ cup water
- Salt (optional)
- Milk
- Cheese
Instructions:
- Pour the water and macaroni into your mug. Add a pinch of salt and stir (optional).
- Microwave for 2-4 minutes, or until mac is tender.
- Add/drain water as necessary.
- Once macaroni is done, add a splash (or two) of milk and a pinch of cheese. Stir and microwave for about 30 seconds.
- Voila!
Tip: Scrub your mug immediately after consuming. Otherwise, the melted cheese will dry onto your cup like concrete.
Egg “Fried” Rice (Makes 2 servings.)
Why order greasy takeout when you can make your own fresh dinner for two at a much more affordable cost?
Ingredients:
- ½ cup white rice
- 1 cup water
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- ½ cup – 1 cup frozen veggies
- 2 eggs
Instructions:
- In a microwavable bowl, add rice, water, soy sauce, and sesame oil. Stir and cover with a small plate. Microwave for 6-8 (or 9) minutes. Again, timing will vary.
- Carefully remove from microwave and uncover. (Steam is hot!) Stir in veggies and recover.
- Meanwhile, scramble 2 eggs in a microwave-safe mug and microwave for about 1 minute.
- Stir fully cooked eggs until crumbly, and then combine with rice mixture.
- Enjoy with a friend or indulge. The choice is yours.
